As a full-time working mom, weekends are everything, but Sundays especially are where it’s at.
A Sunday well spent brings a week of content.
A Sunday well spent to me is one where I have absolutely no plans. I love not having to set my alarm, lounging around with the girls in my comfy Lularoe leggings, catching some Z’s during their mid-morning nap, catching up on housework, and ending the night meal preppin’ for the week and having a nice dinner with my husband.
Today I accomplished all of that. 😃
For this week’s work lunches I meal prepped baked chicken, broccoli, cauliflower, and sweet potatoes. This is one of my favorite go-to’s as it’s super easy, super delicious, and super healthy.
Baked Chicken, Broccoli, & Sweet Potato
Serving Size: 4
Prep Time: 10 minutes
Cook Time: 27 minutes
Total Time: ~40 minutes
Ingredients
- 1 lbs chicken breast
- Broccoli and/or cauliflower
- 2-3 sweet potatoes
- 2 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 tsp paprika
Directions
- Preheat oven to 425°F
- Cube sweet potatoes and place on a baking sheet
- Cube chicken and place on one half of a second baking sheet
- Cut broccoli and/or cauliflower into bite-sized pieces and place on second half of second baking sheet
- Drizzle olive oil over both baking sheets
- Combine seasonings and sprinkle over both baking sheets
- Bake for 12 minutes, take out the chicken & broccoli baking sheet, and continue baking the sweet potatoes for an additional 15 minutes.
Notes
Feel free to add or eliminate the crushed red pepper flakes depending if you want a little spiciness or not. Also, I prefer smoked paprika to original.
This is a balanced meal of lean protein, veggies, and complex carbs. Sweet potatoes have always been one of my favorites, but even more so now that I breastfeed. If you didn’t know, sweet potatoes are a galactagogue, i.e. they can help boost your milk supply.
I end my meal prep by portioning out my protein, veggies, and carbs into their appropriate portion control containers. These containers are awesome because they take the guesswork out of having to weigh out suggested serving sizes.
